Chicken & Rice Bowls with Creamy Garlic Sauce

Ingredients:

  • 2 cups cooked white rice
  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Begin by preparing the rice according to package instructions or using leftover cooked rice for convenience. Set it aside once ready.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Season the chicken breasts with salt, pepper, and garlic powder on both sides.
  4. Carefully place the chicken in the skillet and cook until golden brown, about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Transfer the chicken to a plate and cover it to keep warm.
  5. In the same skillet, add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant.
  6. Pour in the chicken broth and scrape the bottom of the pan to deglaze, releasing all the flavorful bits. Bring it to a gentle simmer for about 2-3 minutes.
  7. Reduce the heat to low and stir in the heavy cream. Let this mixture simmer for another 5 minutes until it thickens slightly. Add salt and pepper to taste.
  8. Slice the cooked chicken and return it to the skillet, allowing it to warm through in the creamy sauce for a couple of minutes.
  9. To serve, scoop a generous amount of rice into bowls, top with the creamy garlic chicken, and sprinkle with fresh parsley for a pop of color.
